Take an afternoon journey and visit the wild and wonderful world of fermented vegetables! Learn to make microbes dance. This is an exploration of not only bacterial culture, but also human culture. This hands-on experience will consist of three components. The lecture component will discuss the science and microbiology behind wild fermentation, consider the historial context of fermentation, cover the technical aspect of actually building ferments and more. The tasting component will give the opportunity for participants to taste some wild vegetable ferments. The final portion of the workship will allow for 15 participants to follow along and build their very own ferments to take home and experience wild fermentation first-hand.
